In urban areas of Senegal, the consumption of loaf bread is very common. About 300 000 tons of wheat are imported annually costing about 100 million USD. Senegal had previously sought to reduce these costs, but must also ensure the availability of bread to its population.

Therefore, many different technologies have been developed, including millet flour combination with that of wheat at a rate of 10-20 percent and 80-90 percent of wheat with varying results. WAAPP researchers reported that the challenge is more related to the identification and use of high yielding millet varieties for a bread production that will be appreciated by consumers.

With the support of WAAPP, some key actions were needed: (a) the production of good varieties of millet; (B) the production of a good quality of flour to have the appropriate bread; (C) the training of bakers on the efficient production of composite bread, and (d) how to accustom user to the taste of the new bread. Moreover, WAAPP through ASPRODEB (Senegalese Association for the grassroot development) should organize producers into groups to ensure an adequate supply of quality millet seeds. For this, four (4) processors of agricultural products have been mobilized for the grinding of millet grain to meet required standards. Fifty bakeries have also been mobilized to participate in this initiative. It is important to emphasize that the education system of Dakar has adopted the new bread in his nutrition program.
